Storing Spices and Lentils

Whole spices keep 2–3 years and ground spices 6–12 months; dry lentils keep 1–2 years in an airtight container below 25 °C.

Spices and lentils fail in different ways. Spices lose aroma; lentils simply age. The storage rules below keep each one inside its working window.

Whole spices keep 2–3 years before they lose aroma; ground spices keep only 6–12 months. The test is manual, not visual: rub 1 tsp between your fingers, and if the smell is faint the spice is past its best, whatever the date on the jar says.

Dry lentils keep 1–2 years in an airtight container stored below 25 °C. Once the bag is opened, refrigeration roughly doubles that window — useful for the dal you cook least often.

Container size should follow the clock. A masala dabba bowl holds 30–60 g, which matches the 6–12 month life of a ground spice; garam masala is used 3–6 g at a time, so even a small jar can outlive its aroma if you buy big. Whole seeds and lentils tolerate larger containers because their clocks run in years.
